The best way to enjoy low sodium chicken is to boil your own chicken and use the meat from that, but many of us are in a hurry and get a rotisserie chicken, but make sure you discard the skin as it is full of sodium. Then add some of your favorite berries and fruit to your chicken and then use a mix of Greek Yogurt or low fat sour cream or a combination of the two, keeping away from the mayonnaise's. Add fresh herbs, it really pulls out the flavor.

Mango Chicken Salad

One of my favorite low sodium Chicken Salads is made with mango, it’s sweet tropical flavor is always a winner any time I make this salad.

Ingredients
  • 4 ounces diced (cooked) boneless, skinless, chicken breast (about 1 cup)
  • 1 Mango sliced and diced
  • 1/4 cup diced celery
  • 2 tablespoons sliced green onion
  • 1/4 cup diced sweet, crisp apple
  • 1 tablespoon light sour cream
  • 1 tablespoon Greek yogurt
  • Pepper to taste
  • Add a teaspoon of curry to spice it up

Low Sodium Fruit Chicken Salad


Add some of your favorite fruit combinations, fresh fruit is the best, try raspberries, blueberries, blackberries, dried cranberries
INGREDIENTS:
  • 2 cups leftover rotisserie chicken ( white meat only)
  • 1/2 cup diced red onion
  • 1/2 cup diced apple
  • 1/2 cup grapes, halved
  • 1/4 cup dried cranberries
  • 1/4 cup slivered almonds
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon freshly squeezed lemon or lime juice, or more, to taste
  • 1/2 teaspoon garlic powder
  • Ground pepper to taste

    In a large bowl, combine chicken, red onion, apple, grapes, dried cranberries, sliced almonds, Greek yogurt, lemon juice, garlic powder, salt and pepper, to taste.
You can wrap the chicken salad around a leaf of Romaine lettuce (that keeps it really low sodium) or put it between a couple of slices of whole grain bread with lettuce.

Avocado Chicken Salad

If you don’t like adding fruit you’re going to eat your chicken salad right away try it with Avocado, celery and onions.

1 medium Scallions
6 oz Rotisserie Chicken ( White meat only)
1 stalk celery
¼ chopped Cucumber (peeled)
12 fresh Cherry Tomatoes
1 sliced up Avocados
3-4 leaves of fresh basil
½ lime juice


Evenly chop all ingredients, half of avocado chopped, the other half mashed with a dash of lime juice, mix together.
