Pea and Walnut Salad

This is an unusual combination and I was a little skeptical to try it out, but I am so thrilled I did, the walnuts in this pea salad provide many heart-healthy benefits including better cholesterol control by decreasing LDL cholesterol, while increasing HDL - the good cholesterol.

The walnuts are also so good for your heart they are rich in the heart-healthy Omega-3s, this helps the cardiovascular system is by reducing blood pressure.


Ingredients:

3 cups (16 oz.) green peas, thawed
1 cup walnuts, coarsely chopped
6 freshly chopped up leaves of mint.
1 teaspoon Chia Seeds
1 cup Coconut Oil
1/2 cup onions
1/3 cup olive oil
1 tablespoon parsley, chopped
1/2 teaspoon garlic

Instructions:

Place thawed green peas in mixing bowl.  Chop up walnuts and add.  Next combine Coconut oil, mint, onions, olive oil, parsley, chia seeds and garlic  to walnuts and peas.  Mix carefully without smashing the green peas.

Makes 6-8 servings.
